{"id":688,"date":"2005-10-20T15:30:00","date_gmt":"2005-10-20T22:30:00","guid":{"rendered":"http:\/\/www.dianeduane.com\/outofambit\/?p=688"},"modified":"2005-10-20T15:30:00","modified_gmt":"2005-10-20T22:30:00","slug":"its-peters-birthday","status":"publish","type":"post","link":"https:\/\/www.dianeduane.com\/outofambit\/2005\/10\/20\/its-peters-birthday\/","title":{"rendered":"It&#039;s Peter&#039;s birthday"},"content":{"rendered":"<p>And so I cook.<\/p>\n<div>\n<code><br \/>\nMMMMM----- Recipe via Meal-Master (tm) v8.05<\/p>\n<p>      Title: Shin of Beef Stewed in Red Wine<br \/>\n Categories: Beef, French, Meat, Stew<br \/>\n      Yield: 6 Servings<\/p>\n<p>      6 oz Smoked bacon or salt pork<br \/>\n      1 ea Large onion<br \/>\n      1 tb Olive oil<br \/>\n      5 lb Shin beef off the bone<br \/>\n      2 ea Cloves garlic<br \/>\n      1 ea Bouquet garni<br \/>\n      8 oz Red wine (or more)<br \/>\n      1 ts Salt<br \/>\n      8 oz Beef stock or water<\/p>\n<p>  Cut the bacon or salt pork into small cubes and put them, with a<br \/>\n  tablespoon of olive oil, into a heavy and fairly wide iron or<br \/>\n  earthenware pot. When the bacon fat runs, add a large sliced onion<br \/>\n  and stir about until slightly brown. On top, arrange the shin of<br \/>\n  beef, off the bone, into thick pieces. Add the cloves of garlic,<br \/>\n  crushed but not chopped, and the bouquet garni (either one of the<br \/>\n  \"instant\" ones, or a small bunch of parsley, thyme and bayleaf, tied<br \/>\n  up with a string). Pour in a large glass of red wine (about 8 oz) and<br \/>\n  let all come to a fast boil for 4-5 minutes. Add about the same<br \/>\n  amount of beef stock or water, and allow to boil again. Add salt. .<br \/>\n  Cover the pot with paper or foil and a well-fitting lid. Transfer to<br \/>\n  a very slow oven, 290 degrees F or gas mark 1, and in about 3 hours<br \/>\n  it will be cooked. Or you can half-cook it one day, remove it, and<br \/>\n  finish it the next. Serve with potatoes or rice to soak up the sauce.<br \/>\n  (Egg noodles also work well if you thicken the sauce slightly.) This<br \/>\n  dish can also be simmered *very* slowly on top of the stove.<\/p>\n<p>MMMMM<br \/>\n<\/code>\n<\/div>\n<p>&#8230;The latter approach makes it easier to take the lid off every twenty minutes and go &#8220;Oh, wow, just smell that!&#8221;  But for the moment, I&#8217;ve stuck it in the oven. It&#8217;s a pretty afternoon:  we&#8217;ll walk down to the pub and have a glass or so&#8230;then wander back, boil some potatoes, smash &#8217;em up, and have the stew over.
